Huevos Rancheros (Mexican Breakfast)

INGREDIENTS

1 jar Aurelio Organic Mild Salsa
1 clove garlic, finely chopped
2-3Tbs Spiral Organic Extra Virgin Olive Oil
1 can black beans
½ tsp cumin powder
2 eggs
2 corn tortillas
1-2Tbs coriander, finely chopped

METHOD

  1. Pour salsa into a saucepan on medium-high heat. Bring to a boil. Set aside.

  2. Heat a large pan on medium-high. Add 1Tbs olive oil and garlic. Cook and stir.

  3. Add cumin powder and simmer for 3-5 minutes. Set aside.

  4. Heat a large pan on medium-high. Add 1-2Tbs olive oil and corn tortilla. Cook for about 40-60 seconds per side flipping once it starts to brown. Set aside.

  5. Carefully crack the eggs and pour into the same pan on medium heat. Cook for 2-3 minutes or until the egg white is set.

  6. Add the tortilla to a plate. Top with black beans, fried egg and salsa.

  7. Sprinkle coriander on top and serve immediately
